I've noticed this monitoring software plugin today:

You might want to reach out and ask if they'll be including head tracking.
I noticed they use Sennheiser AMBEO technology:

Sennheiser advertise it as a software solution for immersive
listening. One application is VR. I assume there's no software product
and they're looking to sell or license the technology to someone.

Finally, and I think this will be most interesting to you, they have
an existing product for augumented reality (AR) and mixed reality (MR)
which seems to be a pair of headphones with maybe head tracking and an
SDK that integrates with the Apple AR kit, which might mean it'll
interoperate with Apple spatial audio.
